
I often seem to go through "food phases" where I'll crave and fixate on one kind of food. My sisters will vouch that growing up, I could eat corn for breakfast, lunch, and dinner. A few years later, I had to have cream cheese pie daily. After that, it was pickles and popcorn (not necessarily together).
The corn phase seems to have run its course, but I've recently discovered a new food obsession: gjetost. What is gjetost, you ask? It's a brown Norwegian cheese made from goat's milk. I discovered it through a fellow blogger (thanks Jugalbandi...oh the power of the internet...) and have been hooked on it since. There is something addictive about the salty caramel taste; I can't stop nibbling the stuff.
I've learned, through trial and error, that there is an art to savoring it. You have to let it dissolve against the center of your upper palate to get the full salty caramel flavor. I'm thinking that's where the salty caramel receptors must be located.
Before you run out and get yourself a slab though, be forewarned that it seems to be one of those love-it-or-hate-it foods. Me, I'm off to get myself some right now.

If I can find it, I'll try some. There is a Colombian restaurantin town that serves a salty cheese with caramel. I like it.
